Semi hard, unpasteurised, stretched curd (pasta filata) cow’s milk cheese refined with Nero D’Avola red wine. Min. 3 months ageing. A sense of nature pervades the palate with spicy and vinous notes. Bitter flowers, grass and milk emerge, all in balance with the excellent sapidity.

Mainly made in southern Italy, it has a medium intensity flavour with a light piquant bite and a clear fruity notes of wine.
